FISH SOUP
Kuah Teucrah (Spicy Acehnese Fish Soup)

Ingredients
- 5 cloves shallots
- 3 cloves garlic
- 5 red chilies
- 8 bird’s eye chilies
- 4 green chilies
- 1 medium-sized milkfish (ikan bandeng)
- 10 pieces asam sunti (dried sour starfruit)
- 1 thumb-sized piece of turmeric
- 1 tsp coriander seeds
- 5 peppercorns
- 2 sprigs curry leaves (daun temuruy)
- 1 lime
- 4 dried red chilies
- Cooking oil, as needed
- Salt, to taste
- 3 dried chilies (extra)
- 1/2 tsp fish cumin (jintan ikan)
Instructions

Prepare the Fish
Clean the fish and cut it into pieces. Rub with salt and lime juice. Set aside. -
Make the Spice Paste
Blend or grind together red chilies, bird’s eye chilies, shallots, garlic, turmeric, ginger, coriander, and asam sunti until smooth. -
Cook the Soup
Heat about 10 tablespoons of cooking oil. Sauté the spice paste with curry leaves until fragrant. Add the fish pieces and green chilies, then pour in enough water to cover. -
Season and Finish
Add salt and a little sugar to taste. Simmer until the fish is cooked through and the flavors are well combined. Serve hot.
