SPICY SOUR FISH SOUP
🍛Kuah Asam Keueung Khas Aceh (Acehnese Spicy Sour Fish Soup) recipe:
Ingredients

- 5 pieces of ikan cirik (can substitute with mackerel or similar fish)
- 5 pieces of bilimbi (belimbing wuluh)
- 5 pieces of curly green chili
- Water
- Basil leaves
- Lime
- Salt
- Royco seasoning (optional)
Ground spices:
9. 5 bird’s eye chilies
10. 3 curly red chilies
11. 6 black peppercorns
12. A pinch of coriander seeds
13. 12 asam Aceh (dried sour fruit)
14. 3 cloves of shallot
15. 1 clove of garlic
16. 1/2 thumb-sized piece of ginger
17. 1 thumb-sized piece of turmeric
Instructions
Step 1
Clean the fish thoroughly. Add lime juice and salt, then mix well. Set aside to let it marinate.
Step 2
Slice each bilimbi into 3 pieces. Cut each green chili into 3 parts as well. Set both aside.
Step 3
While waiting for the fish to absorb the marinade, prepare the ground spices.
Step 4
Grind together the bird’s eye chilies, curly red chilies, shallots, garlic, coriander, pepper, turmeric, ginger, and asam Aceh. Once smooth, mix the spice paste into the marinated fish. Add salt and water, stir, and bring to a boil.
Step 5
Once the broth is boiling, add the bilimbi, basil leaves, green chilies, and Royco (if using). Stir gently and let simmer until the fish is fully cooked and the broth slightly reduces. Taste and adjust seasoning. Serve hot.
