Ingredients:

  • 400 g (about 1/2 whole) chicken, cut into 6 pieces, half-fried
  • 3 potatoes, diced into 4 cm cubes, half-fried
  • 1 stalk lemongrass, bruised
  • 16 g (1 sachet) chicken bouillon powder (e.g., Royco)
  • 1/2 whole nutmeg, grated
  • 1/2 tsp ground white pepper
  • 1/4 tsp salt
  • 1 liter water
  • 3 tbsp cooking oil (for sautéing)
  • 2 tbsp fried shallots (for garnish)

Ground spices:

  • 5 shallots
  • 5 cloves garlic
  • 2 cm piece of ginger

Cooking Instructions:

Heat the oil in a pot. Sauté the ground spices and lemongrass until fragrant.

Add the potatoes and sweet soy sauce (such as Bango), and stir well.

Add the chicken, salt, pepper, grated nutmeg, chicken bouillon, and water. Mix thoroughly.

Simmer over low heat until the chicken is fully cooked and the sauce has thickened.

Remove from heat, sprinkle with fried shallots, and serve.
