Acehnesa Noodles (mie aceh)

Acehnese traditional food is known for its unique flavors and strong, rich spices. This distinctive taste comes from the region's abundant supply of spices—no surprise, as Aceh is often called the Veranda of Mecca.
Acehnese cuisine is loved by people from all walks of life.
One of the most famous dishes is Mie Aceh, which is now widely available across Indonesia and has gained national popularity. Of course, Mie Aceh is just one of many flavorful dishes from this westernmost province of Indonesia that can truly tantalize your taste buds.
MIE ACEH
Mie Aceh has gained fame for its delicious taste and is loved by many. You can now find Mie Aceh stalls and restaurants in various parts of Indonesia.
Mie Aceh is a type of yellow noodle cooked with a rich blend of traditional Acehnese spices. It comes in various styles and toppings, but generally, there are three main types:
- Mie Aceh Goreng (fried noodles),
- Mie Aceh Tumis (stir-fried or moist noodles), and
- Mie Aceh Rebus (noodle soup).
Ingredients
- 250 grams yellow noodles
- 100 grams chicken fillet
- 100 grams peeled shrimp
- A handful of bean sprouts
- A handful of cabbage (shredded)
- 1 tomato
- 2 shallots
- 1 stalk spring onion
- 2 stalks celery
- 100 ml clean water
- 1 tbsp tomato sauce
- 1 tbsp chili sauce
- 1 tbsp soy sauce
- 1 tbsp sweet soy sauce
- Salt to taste
- 1/2 tsp sugar
- 3 tbsp cooking oil (for sautéing)
Spice Paste (to blend)
- 1 curly red chili
- 7 bird’s eye chilies
- 5 shallots
- 2 cloves garlic
- 2 candlenuts (roasted)
- 10 peanuts (toasted)
- 1/2 tsp ground white pepper
- Fried shallots (for garnish)
Instructions

Pour hot water over the yellow noodles, then drain. Sauté the sliced shallots until fragrant. Add the blended spice paste and stir-fry until the oil separates.

Add water and stir well. Then add meatballs (if using), chicken, shrimp, tomato sauce, soy sauce, sweet soy sauce, salt, sugar, and pepper. Mix thoroughly and cook until the chicken and shrimp are cooked through. Add bean sprouts, tomato, spring onions, and a bit of celery. Stir well and adjust seasoning to taste.

Add the noodles and remaining celery. Stir until everything is evenly coated and well combined with the spices. Remove from heat.

Serve the Mie Aceh Goreng hot, topped with fried shallots and your choice of side garnishes (like pickles, crackers, or lime wedges).
